Try this Mexican rice made with a rice cooker

Mexican rice or red rice is a typical dish from Mexico. It is eaten as an accompaniment for meats or as a filling for typical local preparations.

This rice-based dish includes broth, garlic, onion, tomato, and cumin which give the characteristic red color. Some other Mexican variations of this dish include chili, oregano, cayenne, corn, peas, bell peppers, and carrots.

Mexican rice is the ideal side dish for beans, picadillo, carne asada, tacos, fajitas, enchiladas, burritos, and so much more.

Preparing Mexican rice is very simple, but using a rice cooker becomes an even easier process.

Mexican rice in a rice cooker (8 servings)


  • 1 1/2 cups of long-grain rice.
  • 3 cups of chicken broth.
  • 1 can of tomato paste.
  • 3 tablespoons of butter.
  • 1/2 cup of diced onion.
  • 1 minced clove of garlic.
  • 1 can of diced green chilies.
  • Black pepper to taste.
  • ½ teaspoon of cumin.
  • Salt to taste.
  • Fresh cilantro for garnish.


  1. Rinse rice until water is clear.
  2. In the rice cooker pot, add butter, and heat just for a second.
  3. Incorporate onion, garlic, green chilies. Stir very well.
  4. Add rice, tomato paste, chicken broth, cumin, black pepper, and salt. Combine all ingredients.
  5. Set the time in the rice cooker (according to the user’s manual of your device) and cook the rice.
  6. When it is done, take it out of the rice cooker and serve it with fresh cilantro at the top.
